Day 112 - WIAW, So What and Confessions

Good Afternoon Friends!  How is your Wednesday going so far?  Mine is fine - just lots of work and lots of school work tonight...mentally preparing myself :) Today I am participating in three link ups:

So, today is somewhat of a cheat day for me seeing as I had leftover pizza for breakfast - cold pizza...so good! So, I figured I might share my favorite WW recipe with you all - this is easy, husband-friendly, kid-friendly and healthy:

Baked Chicken

Serves: 4
Use fresh herbs and lemon juice to give plain baked chicken fantastic flavor. This combination of flavors also works well with turkey cutlets or white fish fillets.

I love this recipe, but who has time for fresh herbs?  I use the dried forms :)

Instructions

  • Preheat oven to 400ºF. Coat a small, shallow roasting pan with cooking spray.
  • Season both sides of chicken with salt and pepper. Transfer chicken to prepared pan and drizzle with oil; sprinkle with lemon juice, rosemary and parsley. Pour broth around chicken to coat bottom of pan.
  • Bake until chicken is cooked through, about 30 to 35 minutes. Garnish with fresh lemon and serve. Yields 1 chicken breast half per serving.

If I ordered pizza for dinner last night - I was babysitting and did not have the energy to throw together something everyone would like - pizza is always a crowd pleaser
If I am only 35 pages into a 300 page book I have to read tonight and write a discussion post on...it's going to be a long one folks...
If I have a load of laundry in the wash that I am going to have to rewash tonight...I was so tired last night
If I started the Couch to 5K program Week 2 again this week - I need to be sure that I am ready for Week 3 :) At least I didnt quit :)
If like Ms. Shannon - I too have been eyeing a phone cover on Amazon that I dont need...but it's a purple otterbox for my phone! must.have.it.soon.
If my husband announced that he wants our child to dress in more flouncy dresses and I dont know where to begin - Any help would be greatly appreciated - online inexpensive dresses, anyone?  Thanks!

Today I am confessing that:
I am not a morning person.  I hear my alarm clock go off and immediately shut that thing down and snuggle back into my pillow for some more z's.  What is my problem? I have never been a morning person, my mom used to threaten me that I could not go out with my friends over the weekend if I didnt wake up in high school.  I need help.  Admitting you have a problem is the first step, right?  I really want to be the mom that works out in the morning so I can devote more time to my daughter in the evening...plus be the wife that has dinner ready when the hubs comes home...ugh...I can see who I want to be - why cant I get there?  SO ANNOYING AND FRUSTRATING :(

  1. Thank you for linking up!!! I HAVE to be a morning person... I need to get up by 5:45 for school (if I want to look presentable) and then when I get there I can't show my kids I am tired or they will act like jerks all day, haha!

    Don't change though... just be a night person :)

  3. I think everyone has their issues. I do wake up at 4:30am to workout but I fo sho can't make a meal for my family like you did. Maybe you can come and cook for us and I'll go get you up and movin in the wee hours.ha

  4. I am so not a morning person either! Luckily, I'm not working right now so I can sleep late if I want to. My goal for this next month is to try to get moving earlier in the morning so I can get some 2 a days in.
